Snack Time: Coconut Kettle Corn


I love popcorn. It's a great snack that's unfortunately usually served out of a trough and tainted with greasy artificial butter and powdered orange salt. At home it usually comes out of the microwave and still doesn't taste like much. Here's a recipe I make using healthy coconut oil.

2 tablespoons coconut oil
1/3 cup popcorn kernels
1 packet truvia sweetener
heavy pinch kosher salt

There was a health food store going out of business around the corner from me a few months ago. Expensive nut oils like macadamia and hazelnut oil I got for 75% off! This is the last of the coconut oil. I used this only for popcorn if that tells you how much popcorn I made with it.

Melt the coconut oil in a medium-sized pan over high heat and add one kernel. Constantly moving the pan, wait for the kernel to pop.

Once it does, add the rest of the kernels off the heat and shake the pan for thirty seconds. Put the pan back on the heat, cover and wait for the popping to start.

Once the popping starts, continue to shake the pan and DO NOT lift the lid unless you want kernels flying out of the pot. Continue to shake the pan until the popping stops. Lift the lid and sprinkle with sweetener and salt.
