Pac Choi and Garlic Scape Stir Fry

Stir fry for me is the ultimate kitchen sink dish. Little of this, little of that, some sauce and VOILA! A great meal. It's a natural when it comes to making healthy ingredients taste great and the carb explosion of rice or noodles is always optional in my opinion. I got some pac choi and garlic scapes in my CSA last week along with some farm fresh eggs and here's what I made.

3 garlic scapes
2 head pac choi
2 eggs
1 tablespoon sesame oil
1 teaspoon red chili flake

Look at these snaky looking things. I held one by the end and whipped it around my head like a helicopter.

The pac choi has to be washed really well so I separated the leaves, rinsed them in running water and dried them on paper towels.
Then I cut them into large pieces.

I cut the garlic scapes on a bias to make it real purtty.

Heat the sesame oil in a wok over high heat until it starts to smoke.

Then in go the pac choi and garlic scapes. Saute for two minutes or until the pac choi begins to soften.

Move the veggies up around the sides of the wok and crack two eggs in the middle.

Scramble them until they are fully cooked.

And incorporate them into the veg. Add the chili flake, saute for another minute, season with salt and pepper and serve.
